Banana Cream Cheese and Guava Crepes
As I sat this morning in front of my computer thinking what I should post today, with a bowl of rice crispy with sliced bananas in my hand, it suddenly hit me how long it's been since I haven't had Crepes and how much I love them. For those of you who don't know what crepes are, they are very thin french pancakes that are stuff with fruits or jams and even sometimes chocolate :) So here is a tropical twist on a French Recipe. Hope you all enjoy :)
Banana Cream Cheese filling
Ingredients
1 ripe banana, diced in small cubes
2 tablespoon of brown sugar
4 tablespoons of brandy (optional)
juice of 1/2 lemon
2 tablespoons of butter
4 oz of cream cheese, at room temperature
Procedure
Heat small saute pan and melt butter
Add diced bananas to melted butter, add sugar, lemon juice and brandy. Let bananas cook for about 2 minutes. Don't let it burn or over dry.
Place cream cheese in a mixer bowl and mix, making the cheese creamy, add bananas but don't pour in all the liquid. With a rubber spatula, mix bananas in with cream cheese, than place in refrigerator for 30 minutes.
For Crepes
Ingredients
2 large eggs
3/4 cup milk
1/2 cup water
1 tsp Almond Extract
1 cup flour
3 tablespoons melted butter
Butter, for coating the pan
Directions
In a blender, combine all of the ingredients and pulse for 10 seconds. Place the crepe batter in the refrigerator for 1 hour.
Heat a small non-stick pan. Add butter to coat. Pour 1 ounce of batter into the center of the pan and swirl to spread evenly. Cook for 30 seconds and flip. Cook for another 10 seconds and remove to a cutting board. Lay them out flat so they can cool. After they have cooled you can stack them.
Guava Sauce
Ingredients
1 cup of Guava Paste cut into 1/2 inch pieces
1 tablespoon of water
Directions
In a small sauce pan add guava paste and water, place on medium heat, stirring occasionally until guava melts. Make sure not to let the sauce burn. Once sauce is done shut off the heat and keep in warm place.
How to prepare Crepes
Option 1
Take one crepe and place in center of a plate, spread banana cream mixture and than roll crepe, place 4 on a plate than drizzle with warm guava sauce. If you like you can also dust with powered sugar and garnish with mint leaves.
