Eggs sunny side up for the person on the go




Let's be honest people, most of us want to eat a healthy breakfast, but we don't have the time to actually turn on the stove and cook. So we usually rush out of the house to see if we can make it to McDonald's or Burger King to get a breakfast combo before going in to work, or taking the kids to school. We wolf down about what might easily be 900 calories and than have an argument with our self conscious about eating unhealthy and worse our wallets also joins in the argument because we are wasting too much money. I got good news, there is no need to feel guilty, you can have a hearty healthy breakfast, have money in your pocket and be on time to work, without having to turn on the stove.

The picture above I can't take credit for making, but I can show you exactly how it's done in approximately 5 minutes cooking time, and you don't even have to be in the kitchen the whole time. Now how is that possible you ask? Well all you need is your microwave and toaster, that's it! Now don't be afraid of cooking an egg in the microwave, I know many of you have tried and miserably failed having to clean a smelly mess, it's happened to me, but once you use the VERY simple technique that I will explain here, you will never fear the microwave again.

First you want to get your ingredients ready, you are going to need

Eggs
Thin sliced ham, bacon or prosciutto (what ever you like)
English Muffin
Chopped Green Onion or your favorite chopped herbs such as chives, parsley, etc.
Cooking Spray or cooking oil
Microwaveable glass bowl or Short Coffee cup for easy removal of egg.
Damp paper towel

 Procedure



 Spray  your microwave safe bowl lightly with cooking spray. If you don't have spray you can brush a bit of cooking oil on the bottom and side of bowl.
Crack open egg and place in bowl, with the tip of a knife, poke the egg yolk without breaking the yolk completely, unless you like the yolk hard than you can go ahead and break the yolk. (the reason you poke the yolk is so it won't explode in the microwave when cooking).


 Place damp paper towel over the bowl and microwave for 1½ minutes. If your microwave is 1100 watts or higher, lower the power level to 50% or your egg might over cook.
Place your English Muffin in toaster.
If you are going to use chopped herbs, you may chop them now, or you can chop them the night before, store them in a small glass bowl with a damp paper towel, and place in a storage bag to keep fresh for the next day.
Once microwave stops check your egg to see if it's done to your liking, if you feel that it needs a bit more time, cook for 15 seconds longer. (Be very careful when removing bowl and paper towel because it gets really hot).
Remove egg before it cools. Place English muffin on a plate, add ham or prosciutto, add egg and top with fresh herb. Eat and enjoy!
It takes longer to read this post than to make this breakfast.





 You can use microwaved poached eggs in any way you like, such as with toast and bacon, or eat alone, or in eggs benedict. If you have an extra 7 minutes to spare you can also make breakfast potatoes in the microwave, just peel a small potato, dice, season with salt, pepper, fresh herbs, coat with about a tablespoon of Olive Oil, place in microwaveable bowl, place plastic wrap tightly over the bowl, and cook on high for 5-6 minutes. You can also have this done the night before and place in refrigerator, than in the morning just pop into microwave.Its very simple.

Remember you don't have to spend money on special microwave bowls to cook eggs, almost any microwavable bowl will do, and you can also cook 2 eggs at a time, just use a larger bowl.



Poached eggs, and microwaved breakfast potatoes are a healthier alternative to fried and fast food and it's healthier to your wallet as well. :)
